Last week, Jon Cheng spoke with Daisuke Nakazawa and Alessandro Borgognone, the two men behind Sushi Nakazawa (23 Commerce Street, 212-924-2212), the West Village sushi restaurant that’s been garnering acclaim for its stunning work with fresh fish. Nakazawa apprenticed under sushi master Jiro — of Jiro Dreams of Sushi fame — before Borgognone lured him to NYC by promising him a chance to oversee his own spot.
