Six months after opening Union Republic (340 3rd Street, Jersey City), a noodle bar and bistro in downtown Jersey City, partners Noah Sexton and chef Gregory Torrech are getting to roll out their summer menu and introduce a ramen corn dog. The 100 percent Angus beef sausage is crafted by in-house butcher UR Prime, battered in cornmeal, and deep fried in knots of ramen. And if the bottles of Sriracha on the counter don’t bring enough heat, the frank arrives sided with housemade kimchi relish and whole grain mustard.
The UR Prime butcher counter is another new addition to the restaurant; it’s the passion of Ayaz Adiguzelli, whose family owns and operates Newton, NJ slaughterhouse Halal Packing. Last year, Adiguzelli opened Cliffside Park butcher shop Mezbah Meat Market but then shuttered its storefront to collaborate full-time with Sexton and Torrech. Adiguzelli cuts and trims porter houses and rib chops are cut and trimmed, and saws marrow bones to order in Jersey City, but he continues to dry age his steaks and roasts for 28 to 100 days in his Anderson Avenue facilities.
If you don’t want to carry out your cuts in butcher paper, Torrech will cook any counter purchase to order, pairing each with two sides like scalloped potatoes, collard greens, and roasted asparagus. The new addition is one more reason Union Republic’s one of the ten best places to eat right now in Jersey City.
As for those corn dogs, while the seasonal menu rolls out over the next two weeks, the dish will run as a rotating daily special. Check Twitter for updates.
