Dish no. 94: Fried chicken Tatsuta from B Flat, (277 Church Street, 212-219-2970)
B Flat‘s Church Street basement gets cacophonous with live jazz twice weekly, but the music never soars quite as high as the chicken tatsuta. Boneless chicken thighs and breasts arrive wearing glistening coats of garlicky ginger potato starch batter; they’re sided with a creamy counterbeat of citrus-twisted mayo. This is one of our favorite bar snacks south of Canal, and it’s best eased into with a throat-coating bordello red Negroni on the rock.
