Dish no. 58: Imbustata at Ornella Trattoria (29-17 23rd Avenue, Astoria, 718-777-9477)
The signature dish at Ornella Trattoria Italiana is Giuseppe Viterale’s unique creation, the imbustata. Italian for envelope, the imbustata is a thin sheet of fresh homemade pasta stacked with roast chicken, tender veal, mascarpone cheese, fresh spinach, mozzarella, and a blend of woodland mushrooms, all carefully tucked into a tight parcel that is baked in a creamy tomato sauce then sprinkled with a dusting of Parmigiano cheese.
