Dish no. 16: Smoked salmon scramble from Clinton Street Baking Co. (4 Clinton Street,646-602-6263)
While you’re waiting for your table at Clinton Street Baking Co., peering wistfully through the front windows at parties you wish would just hurry up already, you’ll watch so many stacks of pancakes make their way from the kitchen to the dining room, it’ll be hard not order a stack of blueberry-topped buttermilks the second you sit down. If you can hold off, though — or if you can convince another member of your group to go halvsies on a couple of dishes — you should at least consider the smoked salmon scramble. For the kitchen here also makes magic with scrambled eggs, and into this fluffy version goes generous hunks of smoky lox. The pile is topped with scallion-enriched creme fraiche, which adds nice savory creaminess to the rest of the dish. You’ll want the multi-grain toast for the texture contrast, and the greens add verdant freshness to the plate.
