Bond Street restaurateurs Matt Kliegman (The Smile) and Noah Bernamoff (Mile End) hit it big this year with Black Seed, their Nolita shop focused on Montreal-inspired bagels. We say “inspired” because the duo’s offerings are hybrids, incorporating honey into both the dough and the water used for boiling. The eight varieties (sesame, poppy seed, multigrain, salt, garlic, everything, pumpernickel, and plain) emerge from the wood-burning oven delightfully soft and chewy with glossy, toothsome crusts. Sesame earns our top marks, the dough aggressively seeded and browned. Perfect on their own, each one is a heavenly base for sandwiches.
