Grimm Artisanal Ales is rewriting the rubric on how to run a brewery. The brand launched in 2013 under artists Joe and Lauren Grimm, who have nearly a decade of brewing under their belts and a deep passion for experimentation, not to mention an interest in yeasts from around the globe and clever thoughts about barrel-aging. They develop each recipe in their Gowanus apartment and then cook it up on a larger scale at one of several rented brew spaces along the East Coast. This is gypsy brewing: The Grimms wander from one brew home to another, incorporating the advice and knowledge of fellow brewers along the way. Each seasonal beer is a one-off, and it’s sold for just one month — after that, it’s gone for good. This is the most exciting brewery to watch — and drink from — in New York.
