Even before bartender Noah Small revamped the cocktail board at Empellón Cocina, this restaurant had one of our favorite margaritas in the city. It’s been fine-tuned just slightly, and so the tightly executed classic version, a more tart than sweet blend of blanco tequila and fresh lime, is elevated by a smoked-salt rim. If that brings joy to your life, consider upping the smoke by subbing mezcal for tequila. And you should dabble in the bar’s additional twists on this classic, too, which change with the seasons — spins include a version infused with rhubarb and another made with cucumber.
