You can take a cooking class in just about any cuisine you can imagine at ICE, the Institute of Culinary Education, from traditional Italian fare, petits fours, and pastry art to classic American bar food and daringly spicy Creole gumbos. But since it’s St. Patrick’s Day week, the teaching chefs at this world-class institution are offering a curriculum of Emerald Isle–inspired dishes. And by dishes, we mean Guinness and whiskey concoctions with some food on the side. Today focuses on desserts, with an intensive course on shortbread cookies and all their buttery variations followed by a workshop on Irish soda bread and sweets, guiding you through recipes for Guinness Chocolate Cake and Bailey’s Irish Cream Cheesecake. On Tuesday, raise a toast at Sláinte: Irish Whiskey Cocktails and Cheeses, a mixology course that proves whiskey can pair just as well as wine.
