Jordan Frosolone is August’s New Chef

Three months after Terrence Gallivan left August to go to the ill-fated Alto, the Bleecker Street restaurant has officially named Jordan Frosolone as its new executive chef.

Per the restaurant’s reps, Frosolone comes to August from Hearth, where he’d worked since 2003 and was appointed chef de cuisine in 2007. Prior to moving to New York, he cooked in Chicago at Coco Pazo, Blackbird, and Nomi.

Frosolone’s new menu is full of hearty, Italian-accented food like caserecci with pork sausage, ricotta, and basil; farro salad with marinated white anchovies, parsley, and red onions; and pecorino tortelli with fava beans. France and Germany are also represented in dishes like beef consommé with gruyère dumplings and bone marrow and spaetzle with mushrooms, ramps, and smoked gouda.

And of course, August’s brunch will remain intact, dragging people from their beds with the lusty promise of challah bread French toast and a panoply of baked eggs.
