Happy National Grilled Cheese Day! In honor of this lunch and midnight-snack staple, we’ve commissioned this easy-to-make grilled cheese recipe from Bowery Diner, which specializes in comfort foods and late-night treats.
Bowery Diner Grilled Cheese
Yield: 4 large sandwiches
Ingredients
8 slices country bread, sliced on a long bias (8 inches)
1 cup sour cream
1.5 cups shredded cheddar cheese
1.5 cups shredded gruyère cheese
1 sprig thyme, picked
½ clove garlic, chopped finely
Salt and pepper
Room-temperature butter
Instructions
Warm a pan on medium heat or turn on your panini press.
Mix the cheese, sour cream, thyme, and garlic together in a bowl, and season with salt and pepper.
Spread the mixture evenly throughout the four sandwiches.
Using a pastry brush, lightly coat the outside of each sandwich with butter.
Toast the sandwich until golden brown on the outside and gooey on the inside.
