Scott Conant is the latest chef to go meatless. He is introducing a new vegetarian menu at Scarpetta, featuring such garden delights as vegetable and farro risotto with shaved parmigiano, and rosemary-braised lentils with broccoli rabe and concentrated tomatoes. Oh, and of course his signature spaghetti with tomato and basil is on there. With such meat-loving chefs as Mario Batali going veggie (he not only hosts Meatless Mondays at all his restaurants, but is also reportedly working on a vegetarian cookbook), and even Iron Chef America getting in on the action with Dirt Candy’s Amanda Cohen competing, it’s time for even the staunchest carnivores to start thinking about reducing their flesh intake.
