The ingredients: Pisco quebranta, lime juice, simple syrup, egg white, and regional bitters

The buzz: Upon first sipping La Mar’s Pisco Sour, you think you’ve had a revelation, namely that this is the best pisco sour you’ve ever had. Wow, you say to yourself, I’ve been all over the world tasting pisco sours and this is it. The best. You’re pretty pleased with yourself. Eventually, you start telling people what you’ve discovered; maybe you try to Yelp it. Only then do you realize you have not made this discovery at all. Everyone already knows it. La Mar has locations in Lima, San Francisco, São Paulo, Bogotá, and serves the best pisco sour in the world at each of them. Duh. Well, at least you’re in on it now. At New York’s new location of La Mar, the lime is said to be imported from Peru because it’s just that much sweeter. For our sour, we called out our pisco — Portón, please — for good measure. The foamy, rich cocktail it produced was beautifully complex and balanced. Sweet-tart, deeply perfumed. A pisco sour to end all pisco sours.
