The ingredients: Santa Teresa Gran Reserva rum, homemade ginger syrup, lemon, pineapple, absinthe
The buzz: This drink, named after the Filipino boxer Manny Pacquiao, doesn’t actually pack a punch. Rather, it goes down smoothly and unobtrusively. Fruity Santa Teresa rum slides down the throat, which is then just barely tickled by the spice in the ginger syrup. Pineapple and lemon juice give the drink some citrus flair — it is, after all, a tropical punch. An absinthe rinse tops it all off, creating a pleasing slight fizz and a refreshing finish.
