The ingredients: Bols Genever, golden ale reduction, bitters, with a wash of kirschwasser and absinthe, served up in a handsome rocks glass.

The buzz: The Vandaag Gin Cocktail might not look like much — three fingers of golden tangerine liquid with no garnish and no ice. And no gin, for that matter. It’s made with genever, the juniper-flavored Dutch precursor to gin. But those three fingers are some of the most surprising you’re likely to taste in a while. Sharply bitter and slightly malted (from the golden ale reduction, presumably), it’s an unexpected mix of pleasantly medicinal flavors. The perfect drink for such an unusually sterile yet still somehow sunny room.
