Dish No. 67: Fish ‘n’ Chips at Sel de Mer

Today’s dish: Fish ‘n’ chips at Sel de Mer (374 Graham Avenue, Brooklyn, 718-387-4181).

The requirements for good fish ‘n’ chips are relatively few: crunchy, golden-brown crust; moist, flaky fish; generously salted, crispy-tender chips. Accompanying paintings of ancient mariners optional.

At Sel de Mer, the fish ‘n’ chips ($15) meet all of the requirements, and then some. The fish comes encased in a beer-battered, deeply tanned crust that’s salty and thick, and answers each bite with a lusty crunch. The fish itself is buttery and pliant, and makes a happy bedfellow to the house-made tartar sauce and big bottle of malt vinegar. The chips come bearing evidence of their original potato skins and are fat, salty, and a model of crispy-on-the-outside, creamy-on-the-inside perfection.

It’s all served in a generous enough portion to fool you into thinking you’re in a Long John Silver’s rather than Williamsburg, eating under the watchful eyes of those crusty old mariners, captured in oil paint and gazing impassively at the enthusiastic displays of consumption.
