It shames me to think how close I came to not ordering the scallion pancakes at New Green Bo because, as I said so snottily, “they’re boring.”
In fact, they’re outrageously delicious, and a big pile of them costs $1.50.
Scallion pancakes are often dense, greasy little wedges who lack taste and personality. These, on the other hand, are noble and complex: puffy with air, outlined in a crisp brown sheath, but slightly chewy and fat-laden under the surface.
